Double Corn Muffins

Ingredients

  • 1 1/4 cups whole wheat white flour
  • 3/4 cup cornmeal
  • 1 Tb baking powder
  • 1 tsp salt
  • 1/4 cup sugar
  • 2 eggs, beaten
  • 1 cup milk
  • 1/4 cup canola oil
  • 1 cup frozen corn

Directions

  1. Preheat oven to 400'.
  2. In a large bowl mix together dry ingredients.
  3. In another bowl combine milk, eggs and oil.
  4. Add to dry ingredients and stir just until moistened.
  5. Fold in corn.
  6. Spoon into buttered muffin tins.
  7. Bake 20-25 minutes until golden.
