1) Cut eggplant lengthwise into medium thick slices and absorb moisture with paper towels.
2) Purée tomatoes, basil, garlic and olive oil in food processor. Salt and pepper to taste.
3) Mix bread crumbs and flour in a flat wide bowl.
4) Beat eggs in a separate wide bowl.
5) Cover eggplant slices in bread/flour and then coat with egg, then fry in frying pan with olive oil over medium heat until golden brown.
6) Preheat oven to 350 degrees
7) Pour a layer of sauce in a wide baking dish, then lay eggplant slices in sauce. Cover slices with mozzarella and parmesan cheese, then add another eggplant layer and cover with remaining cheese and sauce.
8) Bake at 350 degrees for 30 min
9) Serve over spaghetti with side of green vegetable and glass of wine
