Ingredients

• 1 1/2 cups plain flour
• 1/2 cup icing sugar
• 130g butter
• pinch salt
• 1 egg
• 100g almond meal
• 100g butter, at room temperature
• 100g caster sugar
• 1 large egg, at room temperature
• 1 tsp vanilla extract
• 3-4 pears (you may not use them all, but you could poach up to 8 in this liquid!)
• 1L water
• 100g caster sugar
• 5 earl grey tea bags
• 2 tsp vanilla extract
• 1 cinnamon stick
• 1 strip of orange zest (using a peeler)
