Easy Beef Stew - Pg 109

Ingredients

  • 1 kg diced beef
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 teaspoon garlic
  • 2 carrots, chopped
  • 3 stalks celery, chopped
  • 1 litre beef stock
  • 2 bay leaves
  • 1 x 425 grams can tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • Fresh parsley, to serve

Directions

  1. Season the diced beef. In a frying pan over medium heat, sear the diced meat in the olive oil until browned.
  2. Add the onion and garlic and continue to cook until the onion is translucent. Stir in carrots and celery and cook for 4-5 minutes until tender.
  3. Add remaining ingredients and bring to the boil, then let simmer for about 50 minutes.
  4. Serve with fresh parsley.
