Easy Caponata

Ingredients

  • 2 Tbsp Extra Virgin olive oil.
  • 2 Italian eggplants
  • Salt
  • ¼ cup olive oil
  • 1 onion, diced
  • 4 cloves garlic minced
  • 1 can diced tomatoes 15 oz
  • 1 red bell pepper diced
  • ½ cup green and black olives chopped
  • ¼ cup capers
  • 1 tsp salt
  • ¼ teaspoon black pepper

Directions

  1. Preheat oven to 400 F.
  2. Place some olive oil in a large bowl.
  3. Trim top and bottom off eggplant. Cut in half, then in 3 long slices, then into half inch slices.
  4. Mix eggplant with olive oil il the bowl, then spread out on a baking sheet.
  5. Sprinkle with salt, and place in the oven for 20 minutes.
  6. Fry onion and garlic in a frying pan.
