Easy Thai Inspired Noodle Salad With Peanut Sauce

Ingredients

  • 100-125 g rice noodles (or other noodle of choice)
  • 2-3 cups chopped vegetables of your choice (bell peppers, radishes, cucumbers, snap peas)
  • 1/4-1/2 cup chopped peanuts or cashews
  • handful fresh herbs like mint and/or cilantro to top
  • FOR THE SPICY PEANUT SAUCE
  • 1/2 cup smooth peanut butter
  • 2 tbsp chili-garlic sauce (or another hot sauce)
  • juice of half a lime
  • 1 tbsp soy sauce or tamari
  • 2-4 tbsp hot water
