Cooking vegan doesn’t have to mean delving into new and unusual territory. Our suggestion: Unless you’re already a chef or love to experiment in the kitchen, start with something easy like spaghetti and plant-based meatballs.

For the sauce:
2 tbsp olive oil
1 onion, finely sliced
2 garlic cloves, thinly sliced
½ tsp of chili flakes
2 tbsp of tomato paste
2 x 14.5oz cans chopped tomatoes
½ cup of fresh basil chopped
1 tbsp dried oregano
Salt and pepper to taste
Spaghetti pasta to serve

Method:
Heat the olive oil in a saucepan then add the onion and fry for five to ten minutes or until the onion has softened.
Add the garlic and chili flakes and fry for a further two minutes.
Stir in the chopped tomatoes and optional tomato paste, then leave to simmer on low heat for twenty minutes.
Meanwhile, cook your chosen vegan meatballs according to the package instructions.
When the sauce has simmered for twenty minutes, stir in the cooked vegan meatballs and serve with a pasta of your choice. Season to taste with salt and pepper.
