Ed’s Corn bread

Ingredients

  • 4 large eggs
  • 2 1/2 cups Milk
  • 1/2 cup cream cheese
  • 1/2 lemon, juiced
  • 1 cup vegetable oil
  • 2 tsp salt
  • 1 big tsp baking powder
  • 1 cup plain flour
  • 1 cup whole wheat flour
  • 2 cups medium cornmeal flour
  • 1 cup kernel corn

Directions

Preheat oven to 180 C
Beat the eggs in a large bowl
Add the milk, cream cheese, lemon juice, vegetable oil, salt, and baking powder
Blend flours together and slowly mix into liquid? You should have a soft mixture that can be poured in to a baking tin.
Bake for around 40 minutes. Keep checking.
It is ready when springy like a sponge cake.
Turn out and serve hot, warm or cold.
