On a clean flat surface lay out wrapper so it's diamond shaped, add one large spoonful/TBLS of filling to center of wrapper. Fold bottom piece up. Dab egg on the tip of wrapper. Fold sides over one at a time adding a dab of the egg to seal it. Add a dab of egg to the top corner and roll upward. Check to make sure it's closed, no tears or openings. Carefully add egg rolls to the fryer. After a couple minutes turn over, should be nice and golden.
Place on paper towels to drain a bit. Serve with favorite sauce
