Ingredients

  • 1 tsp garlic powder
  • 2 tsp chopped garlic
  • 1 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • 2 tbsp vinegar
  • 1/2 cup chopped green pepper
  • 1/2 large eggplant or 6 thin ones

Directions

  1. In a hot water pot boil the eggplant for 20 min, let rest
  2. Mix all ingredients in a small bowl
  3. Cut eggplant in finger like pieces and place by layer and between each layer spread a little of the marinade
  4. Once done put all the rest of the marinade and add a little water to the last layer.
