Heat oil and add onion, garlic and sauté for a couple of minutes on high heat. Add mushroom and seasoning and continue to sauté for a further 4-5 minutes. Finish off with parsley.
Pour 1/4 batter into pan and swirl around. Fry and flip. Remove from pan and repeat until 4 pancakes made
Place pancake on plate and spoon mushrooms following top and fold over to cover. Sprinkle with paprika and serve with salad.
