Farinata Pancake

Ingredients

  • Batter:
  • 1 1/3 cups water
  • 1/2 cup olive oil
  • 1 cup flour
  • 3 tbsp chopped fresh rosemary leaves
  • Filling:
  • 1 tbsp olive oil
  • 1/2 onion chopped
  • 2 garlic cloves chopped
  • 2 cups button mushrooms
  • 2 cups wild mushrooms
  • 1/2 bunch parsley
  • Serve with Aoili (vegan mayonnaise),
  • Cherry tomatoes
  • Rocket
  • 1 tap Paprika

Directions

  1. Blend batter ingredients until smooth, set aside
  2. Heat oil and add onion, garlic and sauté for a couple of minutes on high heat. Add mushroom and seasoning and continue to sauté for a further 4-5 minutes. Finish off with parsley.
  3. Pour 1/4 batter into pan and swirl around. Fry and flip. Remove from pan and repeat until 4 pancakes made
  4. Place pancake on plate and spoon mushrooms following top and fold over to cover. Sprinkle with paprika and serve with salad.
