Flourless Pancakes

Ingredients

  • 1. 2 ripe bananas
  • 2. 2 large eggs
  • 3. 1/4 cup oats (optional)
  • 4. 1/4 teaspoon baking powder
  • 5. A pinch of salt
  • 6. 1/2 teaspoon vanilla extract (optional)
  • 7. Butter or oil for cooking

Directions


1. In a large bowl, whisk together dry ingredients
2. In a separate bowl, whisk together wet ingredients
3. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should still be slightly lumpy.
4. Let the batter rest for 5-10 minutes to allow the flour to absorb the liquid.
5. Heat a non-stick skillet or griddle over medium heat. Grease with butter or oil.
6. Using a 1/4 cup measuring cup, scoop the batter onto the pan.
7. Cook for 2-3 minutes, until bubbles appear on the surface and the edges start to dry.
8. Flip and cook for another 1-2 minutes, until golden brown.
9. Serve hot and enjoy!

*Tips for Fluffy Pancakes*

- Let the batter rest to allow the baking powder to activate.
- Don't overcrowd the pan; cook the pancakes in batches if necessary.
- Don't flip the pancakes too many times; this will deflate them and make them dense.
