Fluffy Greek Yogurt Scrolls

  • • 2 cups self-raising flour (300g total)
  • • 1 cup Greek yogurt (full-fat = softer result) (240g)
  • • ½ cup grated cheese (plus extra for topping)
  • • 2–3 slices ham, chopped
  • • 1 tbsp almond milk (this is one of the fluffiness tweaks!)
  • • Optional: pinch of salt, garlic powder, or herbs

Directions

  1. 1. Preheat oven to 180°C. Line a tray. (Do after get dough out of fridge)
  2. 2. Make the dough

In a bowl, mix:

  1. • flour
  2. • Greek yogurt
  3. • milk
  4. Stir until it comes together, then gently knead (lightly!) until smooth.
  5. 👉 Key tip: Don’t over-knead — this keeps them soft, not dense.
  6. (Cover with wrap and put in fridge for 20 mins - It firms up the dough → way less sticky → easier to roll cleanly)
  7. 3. Roll it out- add flour to bench and flour rolling pin
  8. Roll into a rectangle (about 1–2 cm thick).
  9. 4. Add filling
  10. Add bbq sauce, Sprinkle cheese + ham evenly across.
  11. 5. Roll & slice
  12. Roll into a log, then slice into scrolls.
  13. 6. Bake

Place on tray, top with extra cheese, bake for:

  1. • 20 minutes
  2. • until golden and cooked through
