  • 85g packet jelly crystals
  • 1 cup boiling water
  • 375ml can evaporated milk, chilled until very cold

Directions

  1. Dissolve jelly crystals in boiling water. Cool.
  2. Neat evaporated milk until thick.
  3. Add jelly mixture
  4. Continue beating until thick and well combined.
  5. Pour into six individual serving dishes.
  6. Chill until firm.
  7. Variation: Yogurt Flummery
  8. Omit evaporated milk. Chill jelly until consistency of raw egg white. Beat until thick and foamy. Stir in two 150g pots of fruit flavoured yogurt. Pour into serving dishes and chill until set.
