Flying Biscuit Shrimp And Grits

  • 2 cups half-and-half
  • Salt, to taste 
  • 1/4 tsp. white pepper
  • 2 cups quick-cooking grits
  • 1/2 cup grated sharp white cheddar cheese
  • 4 tbsp. cubed unsalted butter
  • Shrimp
  • 1 tbsp. olive oil 
  • 2 cloves garlic, minced
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 1 can (14.5 oz.) diced tomatoes
  • 1/2 tsp. hot pepper sauce
  • 1/4 tsp. Worcestershire sauce
  • 1/4 cup diced roasted red peppers
  • 1/4 tsp. paprika
  • 1/4 tsp. crushed red pepper flakes
  • 1/4 cup basil chiffonade
  • 1/4 tsp. ground black pepper
  • Salt, to taste
  • 2 lb. shrimp, peeled and deveined, tails left on
