In a shallow dish, whisk eggs with a fork. Add the bread to the dish and allow to soak for up to 10 minutes, turning occasionally.
Heat a lightly sprayed non stick frying pan over medium heat. Add the egg-soaked bread to the pan and cook for 2 to 3 minutes each side, or until lightly golden.
Remove from pan and set aside.
Spray pan again with oil and pour in any remaining egg mixture and scramble. Once cooked to your liking, remove from heat.
Serve the French toast with the sliced banana, and any leftover scrambled egg on the side.
Enjoy with a takeaway coffee or homemade latte made with 1 cup of low fat milk.
