• 5 pounds peaches
• ¼ cup brown sugar
• ¼ cup flour
• ½ teaspoon cinnamon
• ½ teaspoon nutmeg
• ⅛ teaspoon allspice
• ½ teaspoon kosher salt
• zest and juice of one orange
• 1 egg beaten with 1 tablespoon milk
• 2 tablespoons sugar
