Fried Cauli-Rice

Ingredients

  • Fatty ends of pork roast or bacon
  • 3-4 cups riced cauliflower
  • 1 medium onion chopped fine
  • 1 medium carrot chopped fine
  • Ginger paste or powder
  • Garlic paste or powder
  • Soy sauce
  • Salt
  • 1 1/2 c chicken broth
  • 2-3 handfuls of dried peas (reconstituted in broth)
  • Chopped cilantro

Directions

  1. Fry fatty meat and remove from pan. Sauté onions and carrots, add caulirice and stirfry for a minute. Season with garlic and ginger. Add chicken broth with peas, soy sauce and season with salt. Let cook until tender. Add chopped cilantro before serving.
