Frozen Strawberry Yogurt Gems

  • 900 g chocolate (dark, milk, or white)

Directions

  1. Begin by preparing the glaze. Break the dark, milk, or white chocolate into small chunks and melt it aubaine marie. Once melted, add 25ml of sunflower oil and mix until well combined. Set the glaze aside to cool slightly.
  2. Using a spoon, carefully coat the cavities of a silicone half-sphere mould with the chocolate glaze. Spread the chocolate evenly, applying it in 2-3 layers if necessary. Place the mould in the fridge between each layer to allow the chocolate to set. Ensure the chocolate has a thick consistency, making it easier to cover the cavities.
  3. While the chocolate sets, dice the strawberries into small pieces. In a bowl, combine the diced strawberries with the plain yogurt.
  4. Fill the cavities of the mould with the strawberry and yogurt mixture, pressing it firmly into place.
  5. Cover the filled cavities with more melted chocolate and place the mould into the freezer for 3-4 hours, allowing the treats to freeze completely.
  6. Transfer the remaining melted chocolate into a piping bag. If needed, reheat it in the microwave for a few seconds to achieve a smooth consistency.
  7. Remove the semi-spheres from the mould and decorate them with the melted chocolate, sprinkles, and any other desired toppings.
