Funnel Cakes

Ingredients

  • 1 egg Beaton
  • 2/3 cup milk
  • 1tsp baking powder
  • 1 1/4 cup flour or coconut flour
  • 2 tbsp sugar
  • 1/4 tsp salt
  • Oil for frying enough to cover bottom of skillet
  • Powdered sugar for topping

Directions

  1. Mix egg and milk
  2. Mix dry ingredients
  3. Add dry to wet ingredients slowly
  4. Preheat oil
  5. Pour batter into oil with funnel. Let batter drizzle into hot oil spiralling to crate a circle
  6. Cook about 1 min and flip over, cooking both sides
  7. Remove and drain on paper towels
  8. Sprinkle with powdered sugar and top with fruit and ice cream
