Ginger Apple Chutney

Ingredients

  • 8 skinned and diced apples
  • 2 fs. Caraway seed
  • 2 ts fennel seed
  • 1 1/2 Tbsp salt
  • 2 ts. Black pepper
  • 6 Tbsp apple cider vin.
  • 5 Tbsp ginger
  • 1/8 ts cayenne pepper
  • 1 c apple juice
  • 1 c sugar
  • 1/4 c canola oil
  • 3 c diced shallots
  • 4 sticks of cinnamon
  • 1 c Marsala

Directions

Add oil to large sauté pan with cinnamon sticks and cook for 45 seconds
Add seed and cook 10 seconds stirring continuously
Add shallots and cook on medium heat until golden (10 minutes)
Add apples ginger salt pepper and cayenne
Cook until the apples start to get sticky deglaze with Marsala and reduce to 1/3
Add sugar apple juice and apple cider vin. And reduce to au sec
Let cool
