Granola Bars

Ingredients

  • BASE INGREDIENTS:
  • 1/2 cup macadamia nuts
  • 1/2 cup sesame seeds
  • 1/2 cup almonds
  • 1/2 cup cashews
  • 2 Tbsp chia seeds
  • 1/2 cup shredded coconut
  • SAUCE INGREDIENTS:
  • 1/4 cup coconut nectar
  • 1/3 cup almond butter
  • 1/3 cup melted coconut oil
  • 1 heaped tbsp unhulled tahini
  • 1/4 tsp ground cinnamon

Directions

  1. Pulse ingredients apart from chia seeds & shredded coconut in blender/food processor until chopped coarsely.
  2. Empty nut mixture into a bowl and stir in the chia seeds & coconut.
  3. Mix all ingredients into a saucepan.
  4. Whisk over low heat til sticky sauce forms.
  5. Pour sauce into nut & seed mix, stir until combined.
  6. Press into small, lined slice tray using hands.
  7. Smooth mixture using the back of a spoon.
  8. Freeze for 30 minutes to set.
  9. Cut into bars or squares & enjoy!
