Ingredients

  • 3 lbs meat -1/2 lamb and 1/2 beef.
  • 3 cups rice
  • 3 TBSP Syrian Pepper
  • 3 Tbsp Salt
  • 3 cups water (not in the meat mixture; this is for the pot; but put a little water in the meat mixture so it’s damp)
  • 3 lemons & lemon juice extract added to boiling pot.

Directions

  1. Mix meat mixture thoroughly.
  2. Roll leaves.
  3. Put in a pot with: 1 lamb bone (can use lamb neck); cut up Rhubarb; and salt.
  4. Add water to cover and let boil with plates on it.
  5. Add lemon juice-- use 1/2 to 2/3 of the concentrate, then juice 3-4 lemons in the pot.
  6. Boil one hour. High until it boils, then medium.
