Greek Chicken with Lemon and Feta

Ingredients

  • 🍋 Zest and juice of 1 lemon
  • 🫒 ¼ cup extra virgin olive oil
  • 🧄 3 garlic cloves
  • 🌿 1 teaspoon dried oregano
  • 🌶️ ½ teaspoon smoked paprika
  • 🧂 ¼ teaspoon coarse black pepper
  • 🧂 ½ teaspoon + pinch of sea salt
  • 🐔 1 pound of thin-sliced chicken breast
  • 🧀 ¼ cup feta cheese
  • 🌿 ¼ cup fresh parsley

Directions

1️⃣🍋 In a large mixing bowl, combine lemon zest and juice, olive oil, garlic, and all spices. Reserve ¼ cup of the marinade for later.
2️⃣🐔 Add the chicken to the remaining marinade. Toss to ensure each cutlet is fully coated. Cover and refrigerate for 30 minutes.
3️⃣🍳 Heat a nonstick skillet over medium-high heat. Drizzle in olive oil and place the chicken in the pan. Sear until golden brown, then flip and cook until white in the middle and juices run clear.
4️⃣🍽️ Transfer the chicken to a serving plate. Drizzle with the reserved marinade. Sprinkle with fresh chopped parsley and feta cheese.

Notes 💡:

Marinating the chicken for at least 30 minutes deepens the citrus flavor.
Lemon helps to tenderize the meat, making it a great option for marinades.
