Greek lemon potatoes

Ingredients

  • 1kg potatoes, roughly chopped
  • 8 cloves garlic, thickly sliced
  • 1 onion sliced
  • 1/4 c olive oil
  • 1T lemon zest
  • 1/2c lemon juice
  • 1/2c water or stock
  • 1t dried oregano
  • 1t salt

Directions

  1. Preheat oven to 170°C.
  2. Place potatoes, onion and garlic in an baking tray.
  3. Mix other ingredients together and pour over potatoes and toss to combine.
  4. Cover with foil and bake for 70 minutes.
  5. Remove foil, turn potatoes and return to oven uncovered and cook for another 10 minutes or until potatoes are lightly golden and most of the liquid has evaporated.
