Ingredients

  • 2 Cups Cooked Bulgur or quinoa
  • 2-3 Cup Baby Spinach
  • 2½ Tbsp Olive Oil Divided
  • 1 Tbsp Red Wine Vinegar
  • 10 oz Halloumi Cheese sliced
  • 2 Pita Bread cut into triangles
  • 4 Pickled Artichokes Cut into halves
  • ⅓ Pitted Kalamata Olives
  • ½ English Cucumber Seeded and diced
  • 1 ½ Cup Cherry Tomatoes halved
  • 1 Small Red Onion sliced
  • 2 Tbsp Red Wine Vinegar
  • A handful of fresh mint, picked
  • Homemade hummus:
  • 14 oz Chickpeas or garbanzo beans (1 can ) rinsed and drained
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Tahini
  • 1 Tsp Paprika
  • Salt and fresh ground pepper, to taste
