Greek Quinoa Zucchini Fritters

Ingredients

  • ½ cup quinoa
  • ¼ cup onion, diced
  • 1 garlic clove, minced
  • 3 cups grated zucchini, as much water squeezed out as possible
  • 2 tsp. dried oregano
  • 1 tsp. dried dill
  • ½ cup flour (I used 100% whole wheat pastry flour)
  • ½ teaspoon baking powder
  • 2 tbsp. lemon juice
  • generous pinch salt/ground pepper
  • Hummus Sauce:
  • ⅓ cup hummus
  • 1 large lemon, zest and juice
  • 2 garlic cloves, minced
  • ½ tsp. dried dill
  • Parsley, for garnish (optional)
