• 1 red onion, halved and sliced into ½ -inch pieces
• 1 courgette, halved and sliced into ½-inch pieces (half moons)
• 1 large pepper, cored and sliced into ½-inch thick slices
• 1 large tomato, cut into 8 wedges

• 4 boneless skinless chicken thighs
• ¼ cup pitted Kalamata olives
• 100g feta cheese, cut into chunks
• Chopped Italian parsley, for garnish
