Greek Yoghurt Protein Parfait

Ingredients

  • 240g plain Greek yoghurt
  • 60g frozen raspberries
  • 60g frozen blueberries
  • 30g chopped almonds
  • 14g unsweetened shredded coconut
  • 1 tbsp sugar free syrup or sweetener of choice

Directions

  1. In two serving glasses or bowls layer half of the Greek yoghurt at the bottom.
  2. Add a layer of raspberries and blueberries. Sprinkle chopped almonds and shredded coconut over the fruit.
  3. Add the remaining Greek yoghurt on top. Drizzle with sugar free syrup if desired. Serve immediately.
  4. Serving size: 1 parfait (about 200g)
