Green Curry with Beef

Ingredients

  • 500g beef fillet, thinly sliced
  • 1/2 jar green curry paste
  • 400ml coconut milk
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 2 tbsp oil
  • 1 cup water
  • 2 cups zucchini, cubed
  • 2 cups basil leaves
  • 1 red capsicum, sliced

Directions

  1. Heat oil in pan, sir fry curry paste over low heat for 2 mins. Add half the can of coconut milk over medium heat.
  2. Add fish sauce, sugar and zucchini, stir and add remaining coconut milk and water. Bring to boil, simmer until zucchini is cooked.
  3. Add beef and capsicum. Return to boil and add basil before removing from heat. Serve with rice.
