Grilled Chicken Margherita

Ingredients

  • • 4 boneless, skinless chicken breasts
  • • Salt and pepper to taste
  • • 2 tablespoons olive oil
  • • 1 teaspoon garlic powder
  • • 1 teaspoon Italian seasoning
  • • 2 cups cherry tomatoes, halved
  • • 1/4 cup fresh basil, chopped
  • • 1 cup shredded mozzarella cheese
  • • 1/4 cup balsamic glaze

Directions

1. Preheat your grill to medium-high heat.
2. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Drizzle with olive oil and rub the seasonings into the chicken.
3. Place the chicken breasts on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.
4. While the chicken is grilling, combine the halved cherry tomatoes and chopped basil in a bowl.
5. Once the chicken is cooked, top each breast with a handful of shredded mozzarella cheese. Close the grill lid and allow the cheese to melt for 1-2 minutes.
6. Remove the chicken from the grill and top with the tomato and basil mixture.
7. Drizzle with balsamic glaze before serving.
