Ground Beef/Pork: Italian-Style Bolognese (Ragù)

Ingredients

  • 1 tablespoon olive oil
  • ¼ cup butter
  • 1 medium onion, finely diced
  • 1 large carrot, finely diced
  • 1 stalk celery, finely diced
  • 4 oz pancetta, diced
  • 7 oz lean ground beef
  • 5 ⅓ oz lean ground pork
  • ¾ cup red wine
  • 2 tablespoons tomato puree or sub 1tablespoon paste to 1tbsp tomato sauce mixed and reduced down.
  • 2 cups chicken stock
  • TO SERVE
  • 2 cups tagliatelle, cooked or sub fettuccini
  • parmesan cheese, grated
