Put 1 seeded and finely chopped red chilli into a bowl. Add the juice of 2 limes, 3 tablespoons olive oil, 2 finely sliced spring onions, 3 tablespoons finely chopped coriander leaves and 1 finely diced Lebanese (short) cucumber. Cut 1 ripe tomato in half, scoop out the seeds and finely dice the flesh. Add the tomato flesh to the bowl and stir the ingredients together. Cut 2 avocados in half and remove the stones. With a small sharp knife, cut the flesh into a fine dice with crisscrossing lines. Run a large spoon between the skin and the flesh and scoop out the diced avocado. Add to the bowl and lightly fold to combine. Serve with corn chips or toasted tortilla triangles.
