Hawaiian Chicken

Ingredients

  • 12oz boneless, skinless chicken breast (cut into 1"cubes, about 24 cubes, 2 large breasts)
  • 1c diced fresh pineapple (24 pieces)
  • 8-6" wooden skewers
  • Sauce:
  • 2tbsp ketchup
  • 2tbsp light soy sauce
  • 2 tbsp honey
  • 2tsp orange juice

Directions

  1. Preheat a broiler or grill on med-high heat.
  2. Thread 3 chicken cubes and 3 pineapple chunks alternately on each skewer.
  3. Combine ingredients for sauce and mix well. Divide into 2 bowls. Set one aside for later.
  4. Grill skewers for 3-5 mins on each side. Brush sauce from one bowl onto chicken and pineapple about every other minute.
  5. After grilling, place skewers in 350* oven. Cook until 165*. Brush on sauce from second bowl.
