Hearty Egg Breakfast

Ingredients

  • 6g olive oil spray (3 sprays)
  • 102g (2) raw eggs
  • 38g baby spinach
  • 34g Wholemeal English muffin, toasted
  • 173g vanilla yoghurt
  • 150g fresh fruit (banana, apple or orange)

Directions

  1. Heat a large non-stick frying pan over medium heat and spray with oil. Once hot, crack the eggs into the pan.
  2. Cook for 3 minutes, or until eggs are cooked to your liking. Remove the eggs.
  3. Spray a frying pan with more oil. Add the spinach. Cook until the spinach has wilted.
  4. Top the muffin half with the fried eggs and serve with the wilted spinach.
  5. Follow with yoghurt and a piece of fruit. Alternatively, save for a mid-morning snack.
