Herbed Chicken with Lemon

Ingredients

  • 3 tbsp ghee
  • 3 lbs skinless chicken legs and thighs
  • or whole chicken cut up
  • 1 medium onion, chopped
  • 3 cloves garlic, crushed
  • 2 tbsp red wine vinegar
  • Juice of 1 lemon
  • 1 cup chicken broth
  • Zest of 1 lemon
  • 1 tbsp chopped fresh rosemary
  • ½ tsp dried oregano
  • ½ tsp dried thyme

Directions

  2. › Melt 1 tablespoon of ghee in a heavy-bottomed pan over medium
  3. heat.
  4. › Brown the chicken in batches, about 5 minutes a batch, and transfer
  5. to the slow cooker.
  6. › Melt the remaining ghee in the pan and sauté the onion for
  7. 5 minutes, until translucent.
  8. › Add the garlic, cook another 3 minutes, and transfer mixture to the
  9. slow cooker.
  10. › Pour the remaining liquids over the chicken and sprinkle the zest and
  11. herbs all over the top.
  12. › Cook on low for 4-6 hours.
  13. › Salt and pepper to taste, then serve
