Ingredients

  • Cruciferous Crunch salad mix from Trader Joe’s (1 package)
  • Half block extra firm tofu from Trader Joe’s
  • 1/2 cup raw slivered almonds
  • 1 cup baby tomatoes, sliced in half
  • 2 Persian cucumbers, thinly sliced
  • Whole avocado
  • One lemon, juiced
  • 1/3 cup high quality olive oil
  • 2 tbsp rice vinegar
  • 1 tbsp Himalayan salt

Directions

  1. Mix tomatoes, avocado, cucumbers in salt, vinegar and lemon, let sit
  2. Massage the greens for 4 minutes
  3. Dice tofu into 1/2 inch cubes or crumble
  4. Combine all ingredients and add almonds
  5. Enjoy!
