In a Saucepan add Egg yolks,salt whisked till thickened and frothy
Add some butter and whisk over low heat till thick. Move on and off heat so as not to cook eggs.
Remove from heat and whisk in remaining butter a Tbsp at a time. Move on and off low heat to-keep warm
Whisk in lemon juice and taste for salt. Add more lemon if desired.
Keep warm on stovetop. May freeze
