Homemade Chicken Nuggets

Ingredients

  • 2 chicken breasts
  • 2 eggs
  • ½ cup flour
  • ¾ cup breadcrumbs
  • oil for deep-frying
  • for marinade 1:
  • barbecue or tomato sauce
  • for marinade 2:
  • 2 tablespoons sweet chilli sauce
  • 2 teaspoons finely chopped fresh coriander
  • for marinade 3:
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce

Directions

  1. Chop chicken breasts into bite-sized pieces. Combine with ingredients of marinade of your choice in a medium bowl.
  2. Toss marinaded chicken pieces in eggs, then flour, and finally in breadcrumbs to coat; transfer to refrigerator 15 minutes to set crumbs.
  3. Heat oil for deep-frying in a large saucepan or wok. Check oil is at correct temperature by cooking a piece of bread in the oil. It should brown in 30 seconds.
  4. Deep-fry chicken nuggets until golden brown and cooked through. Serve with dipping sauce of your choice.
  5. Nuggets may also be shallow-fried if you prefer.
