Chop chicken breasts into bite-sized pieces. Combine with ingredients of marinade of your choice in a medium bowl.
Toss marinaded chicken pieces in eggs, then flour, and finally in breadcrumbs to coat; transfer to refrigerator 15 minutes to set crumbs.
Heat oil for deep-frying in a large saucepan or wok. Check oil is at correct temperature by cooking a piece of bread in the oil. It should brown in 30 seconds.
Deep-fry chicken nuggets until golden brown and cooked through. Serve with dipping sauce of your choice.
