Ingredients

  • 2 cups flour
  • 3 eggs
  • 1/2 tbs. olive oil
  • 3/4 tsp. salt

Directions

  1. Pour flour into a mound. Make a well and add eggs, olive oil and salt. Slowly combine flour from the edges to combine with the egg mixture. Work to bring all ingredients into a dough ball.
  2. Knead 8 minutes until dough is smooth and golden. Cover with plastic wrap and let sit 30-60 minutes.
  3. Divide dough into four equal sections. Flatten each.

Run each section of dough through pasta roller as follows, starting with the widest setting:

  1. No. 1 (3 times)
  2. No. 3 (3 times)
  3. No. 4 (1 time)
  4. No. 5 (1 time)
  5. No. 6 (1 time)
  6. Brush and sprinkle both sides with flour, carefully folding and set aside. Work through all dough sections.
  7. Finally, run each section through desired pasta cutter.
  8. Boil in salted water for 1-2 minutes.
