Pour flour into a mound. Make a well and add eggs, olive oil and salt. Slowly combine flour from the edges to combine with the egg mixture. Work to bring all ingredients into a dough ball.
Knead 8 minutes until dough is smooth and golden. Cover with plastic wrap and let sit 30-60 minutes.
Divide dough into four equal sections. Flatten each.
Run each section of dough through pasta roller as follows, starting with the widest setting:
No. 1 (3 times)
No. 3 (3 times)
No. 4 (1 time)
No. 5 (1 time)
No. 6 (1 time)
Brush and sprinkle both sides with flour, carefully folding and set aside. Work through all dough sections.
Finally, run each section through desired pasta cutter.
