1. Line a baking sheet with parchment paper or a silicone baking mat.
2. Arrange the pecan halves in clusters of four on the prepared baking sheet, with each cluster resembling a turtle’s legs and head. You should have 16 clusters total.
Step 2: Melt the Caramels
1. Unwrap the caramels and place them in a microwave-safe bowl.
2. Add a splash of water (about 1 tablespoon) to the caramels to help them melt smoothly.
3. Microwave the caramels in 30-second intervals, stirring between each interval, until fully melted and smooth. This should take about 2-3 minutes.
4. Let the caramel cool slightly(just enough so it doesn’t run too much when spooned over the pecans), but don’t let it harden.
Step 3: Assemble the Turtle Candies
1. Spoon a small amount of melted caramel over the center of each pecan cluster, making sure to cover the pecans but leaving some of the edges exposed.
2. Allow the caramel to set for about 10 minutes, or until it is firm enough to hold its shape but still slightly soft to the touch.
Step 4: Melt the Chocolate
1. Place the semi-sweet chocolate chips in a microwave-safe bowl.
2. Microwave the chocolate chips in 30-second intervals, stirring between each interval, until fully melted and smooth. Be careful not to overheat the chocolate.
Step 5: Coat the Turtle Candies with Chocolate
1. Spoon the melted chocolateover each caramel-covered pecan cluster, making sure to cover the caramel completely. Use the back of the spoon to spread the chocolate evenly.
2. Optional: Use a fork or toothpick to create a swirl or pattern on the top of each turtle candy for a decorative touch.
Step 6: Set and Serve
1. Allow the turtle candies to cool at room temperature until the chocolate is fully set. You can also place the baking sheet in the refrigerator for about 20 minutes to speed up the setting process.
2. Once the candies are set, carefully peel them off the parchment paper or silicone mat.
3. Serve the homemade turtle candies immediately or store them in an airtight container at room temperature for up to a week
