Hot Lemon Garlic Fettuccine

Ingredients

  • Roughly 8oz of fettuccine
  • Pinch of salt and garlic powder for pasta water
  • 1 c. chicken broth
  • 2 T lemon juice
  • 1 T minced garlic
  • 1/2 t red pepper flakes
  • 1T olive oil
  • 2 T salted butter
  • 1/4 c. heavy cream
  • 4 T flour
  • 4 T cold water

Directions

  1. Combine chicken broth, lemon juice, garlic, oil, and red pepper flakes in a measuring cup
  2. Add mixture to a skillet and heat on medium until simmering
  3. While sauce is heating, cook pasta in a separate pot with a pinch of salt and garlic powder
  4. Remove sauce from flame and add butter, whisking until melted
  5. Add heavy cream and whisk well
  6. Return sauce to simmer
  7. Thoroughly mix flour with cold water in a bowl until completely combined
  8. Add slurry to sauce a bit at a time until desired thickness (may require more or less), whisking constantly to avoid clumping
  9. Once sauce is at desired thickness, and cooked pasta to the pan and mix
  10. Cook on low for about another five minutes
