Line jumbo muffin cups, and spray with cooking spray
Preheat oven to 180C/350F
Peel, core and cut apples into small pieces until you have 2 cups
Place the flour and butter in a large bowl. Use your fingertips to rub the butter into the flour until the mixture resembles fine crumbs.
Add the sugar , baking powder and cinnamon . Stir until well combined.
Add the apple and stir until well combined.
Whisk together the eggs and milk in a jug.
Pour the egg mixture into the flour mixture and stir until well combined.
Spoon the cake mixture into prepared pan. Use the back of a spoon to firmly press and spread mixture over base.
Sprinkle the top with the extra sugar.
Bake for 1 hour 10 minutes or until a skewer inserted into centre comes out clean. Set aside in the pan for 10 minutes to cool slightly.
