Italian Sausage and Potatoes

Ingredients

  • 1 lb. italian sausage (hot, mild, sweet....whatever you like) Cut crosswise into thirds
  • 1 lb. small red potatoes Cut in half
  • 1 jumbo onion Cut into 12 wedges
  • 2 red or yellow bell peppers Cut into 8 pieces each
  • 1 tbls. olive oil
  • Optional:
  • Hot peppers if desired
  • Mushrooms
  • Carrots

Directions

  1. Preheat oven to 450 degrees
  2. In 15 1/2 inch by 10 1/2 inch jelly-roll pan, combine sausages, potatoes, onion, peppers, olive oil, 1/2 teaspoon salt, 1/4 teaspoon pepper and whatever optional ingredients you desire. Toss to coat.
  3. Roast sausage mixture 20 minutes or until potatoes are fork tender and sausages are lightly browned, stirring once half way through roasting.
