1 tablespoon of your favorite meat spice (mine is the dry jerk spice)
2 pinches of salt
1 tablespoon soy sauce
4 tablespoons vegetable oil
2 tablespoons vinegar for rinsing chicken

How to cook brown stew chicken:
To cook your brown stew chicken first you remove skin from your chicken and rinse in a bowl with 5 cups water and the vinegar. Pat dry or drain chicken and return to a dry bowl.
Your scallion, onion and garlic would have been prepared prior. Now add them to your bowl with your chicken. Add your favorite spice, salt, soy sauce and thyme. Using clean hands, massages seasoning into every piece of chicken until they are well coated. You can do this the day before cooking and marinate in the refrigerator. But you can also cook immediately.
In a skillet heat 4 tablespoons of vegetable oil on medium. Shake off the onion, garlic and scallion pieces from the chicken and reserve. When the oil is smoking add each piece.
Brown chicken well on all sides. When all pieces are very brown, add reserved seasoning to pot and cover reducing flames to medium low. After five minutes add 2 cups water to bowl and swirl then add to chicken and increase flames to medium again. Cover and let simmer until the gravy has been reduce to about 2/3 of a cup. Stir once or twice and turn over the chicken pieces in the process.
