Jerk Pork And Sweet Potato Stew

Ingredients

  • 2T all purpose flour
  • 1/4t salt
  • 1/4t pepper
  • 1 1/4lb pork shoulder, cut into bite-size pieces
  • 2T vegetable oil
  • 1 large sweet potato, peeled and diced
  • 1c frozen or canned corn
  • 1/4c minced green onion, evenly divided
  • 1 clove garlic, minced
  • 1/2 medium scotch bonnet or jalapeño, cored seeded and minced
  • 1/2t ground allspice
  • 1c chicken broth
  • 1T lime juice
  • 2c cooked rice (optional)

Directions

  1. Combine flour, salt, and pepper in resealable plastic bag, add pork and shake well to coat. Heat oil in large skillet over medium heat until hot. Add pork in a single layer (working in 2 batches if necessary) and brown on both sides, about 5 minutes. Transfer to crockpot.
  2. Add sweet potato, corn, 2T onion, garlic, chili pepper, and allspice. Stir in broth. Cover and cook on low 5-6 hours.
  3. Stir in lime juice and remaining onion. Adjust salt and pepper. Serve stew over cooked rice, if desired.
