Jojo's Shrimp Taco
Ingredients
- 2 Tablespoon olive oil
- 1 Pound medium shrimp peeled and deveined, tails once
- M. Dash seasoning garlic & herbs / table blend / just a dash of chipotle
- 1/4 cup minced onion
- 2 garlic cloves minced
- 3 Tablespoon white wine
- 1 Tablespoon fresh lime juice
- 2 Tablespoon chopped fresh cilantro leaves
- Cilantro Lime Aioli (make 2/3 cup
- 1/2 Head thin -cut red cabbage
- 1/2 cup olive oil Mayonaise
- 2 Teaspoon chopped garlic
- 2 Tablespoon chopped cilantro
- 2 Tablespoon fresh lime juice
- 1/2 Teaspoon Salt
- 2 Tablespoon minced Jalapeno (remove seeds)
- Fresh Mango Salsa (Makes 1 1/4 cup
- 1 cup fresh Mango (peeled seeded and diced 1/4 inch)
- 2 Tablespoon Red Onion (1/8 inch dice)
- 2 Teaspoon Cilantro (chopped fine)
- 1/4 cup Red Bell Pepper (Diced 1/8 inch)
- 2 Teaspoon Fresh lime Juice
- Toss together and keep in fridge until readly to serve with taco
Directions
Melt the olive oil in a heavy medium skillet over medium heat. Season the shrimp with Ms.Dash to taste. Cook for about 4 minutes until almost fully cooked. Using a slotted spoon, transfer the shrimp to a plate and tent it with foil. Add the onion and garlic and cook until the onion is translucent, about 6 minutes. Stir in the wine and bring to boil, scraping up the brown bits on the bottom of the pan. Boil for 1 minute. Stir in the lime or lemon juice and cilantro. Return the shrimp to the pan and toss to coat with sauce and Continue to cook until the shrimp are fully cooked, about 1 minutes. Transfer the shrimp to a serving platter.
