  • 250g middle bacon, rind removed, chopped
  • 2 brown onions, thinly sliced

  • 250ml (1 cup) pouring cream
  • 100g (1 cup) almond meal
  • 500g zucchini, coarsely grated
  • 1/2 cup chopped fresh basil, plus fresh whole leaves to serve
  • 80g (1 cup) coarsely grated vintage cheddar cheese (see note)
  • 250g smooth ricotta cheese
