LAMB OREGANO

Ingredients

  • 30g butter
  • 1 garlic clove, crushed
  • 1 large onion, chopped
  • 1 teaspoon cardamom seeds
  • 1/2 teaspoon paprika
  • 1kg lamb steak chopped
  • Plain flour
  • 425g can tomato purée (I used tomato paste )
  • 2/3 cup dry red wine
  • 1 cup water
  • 1 small chicken stock cube crumbled
  • 1 bay leaf
  • 1 teaspoon sugar
  • 2 tablespoons chopped fresh oregano

Directions

  1. SERVES 4
  2. Melt butter in saucepan , add garlic, onion, seeds and paprika Stir until onion is soft
  3. Toss lamb in flour. Add gradually to pan over high heat until lamb is browned all over
  4. Stir in the rest if ingredients ( except oregano)
  5. Cover and simmer gently for about 1 hour or until meat is tender
  6. Stir in oregano just before serving and use any leftover oregano to decorate
