Lasagne Casserole

Ingredients

  • 1 pound ground beef
  • 1/2 cup olive oil
  • 1 cup chopped onion
  • 2 minced garlic cloves
  • 3 1/2 cups tomatoes
  • 2 (6 oz) cans tomato paste
  • 2 tsp salt
  • 1 tsp basil
  • 1/2 tsp oregano
  • 1/4 tsp pepper
  • 1/2 bay leaf
  • 1 cup ripe olives
  • 1 (8 oz) pack lasagna noodles
  • 1/2 pound mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Directions

  1. Brown the meat in the olive oil. Add onion and garlic, then cook until transparent.
  2. Add tomatoes, tomato paste, and seasoning. Cover and simmer slowly for one hour or until sauce is thickened. Stir occasionally.
  3. Add olives, slice into sizable pieces.
  4. Cook the lasagna noodles in salted water for 20 min or until just tender.
  5. Spread about 1/4 meat sauce over the bottom of a narrow baking dish, about 7x12x2.
  6. Cover with layer of lasagna noodles, arranging strips lengthwise.
  7. Add a layer of sliced Mozzarella cheese, using about 1/3 then add a layer of Parmesan cheese.
  8. Repeat the layers, ending with the meat sauce and Parmesan cheese.
  9. Bake in a 350 degree oven for 30-40 minutes
